PEA LAMB AND MINT SOUP [loin]

A soup made with lamb bone broth, peas, potato and mint. Served with thin slices of lamb loin, lamb crackling, crispy potato skins and a mint oil.

 

MARINATED BRAISED LAMB SHANKS SERVED WITH STEWED

DRIED FRUIT COOKED IN THE AIRFRYER

Lamb shanks braised with muscadel and served with spicy stewed dried fruit on a bed of creamy samp and a pistachio pesto.

 

Lamb Curry

Lamb knuckles marinated in a spicy yoghurt and braised in a flavourful stock with fresh coconut. Served with a pomegranate raita and steamed basmati rice.

A deboned lamb shoulder rolled with herb stuffing pot roasted with potatoes and served with root vegetables and a rich jus.  


 

LAMB RAGU AND SEMOLINA GNOCCHI BAKE [lamb

A flavourful Lamb and gnocchi bake made with a rich lamb mince ragu, spinach and semolina gnocchi.  A not so traditional Italian pasta bake.

 

WHOLE LAMB NECK ROASTED IN THE OVEN AND SERVED

WITH GREMOLATA AND POLENTA

A whole Lamb neck is slow roasted in the oven with vegetables and herbs until falling off the bone and served surrounded with gremolata and a soft broth infused polenta.
